Champagne flights. Caviar. Rooftop deck.
It will all be found at the Blanc Champagne Bar, says owner Jordin Johnson, whose planning a late summer opening in The Netherland (3835 Main St.) after remodeling.
The name is a reference to blanc de blancs and blanc de noirs – terms used in Champagne to describe the kinds of grapes used in production (either all white grapes or all red), says Johnson.
Blanc will offer Champagne and sparkling wines, traditional Champagne cocktails, sparkling cocktails (such as a grapefruit rosé martini, whiskey tea ginger prosecco, blackberry sage fizz, sparkling margaritas, and strawberry basil rosé sangria), as well as Champagne flights.
It will have well-known brands as well as brands from small, family-owned makers. And, of course, there’s going to be the Bubble Club – a monthly bottle subscription.
Chef consultant Chad Tillman will create “familiar dishes, but elevated” to pair with the Champagne. That will include small plates such as ham croquettes, deviled eggs, caviar, lobster Rangoon dip, miniature fried chicken (with mini Champagne splits), ahi tuna with crispy wontons, and Champagne macerated berries and curd, along with shareables such as steak and frites, and pork ribeye.
It will have a limited menu on the 11th floor rooftop, a fuller menu in the first floor restaurant.
Johnson previously worked in the hospitality and restaurant industry in the Kansas City area before spending the past decade in marketing. A trip to Europe in 2022 refueled her enthusiasm for wine, she says, its history and what a “glass of bubbly represents.”
“Who doesn’t like Champagne? Champagne is something you innately want to drink with friends and family and celebrate everything in life, big and small moments,” Johnson says. “Blanc will have a sophisticated and luxe, but also warm and inviting, aesthetic.”
Canary had first operated in the two spaces in the redeveloped The Netherland (circa 1928), then Boho Sway at Canary. But they became available in January.
The Spanish revival-style apartment building is on the National Register of Historic Places.
Blanc Champagne Bar customers will have access to 70 secured and privately managed parking spaces. The historic building also aligns with the future streetcar line.
