Husband and wife duo Sarah Nelson and Louis Guerrieri opened their north KC restaurant Ombra at the end of 2022. They saw the restaurant as a chance to redeem themselves after opening, and closing, a sushi restaurant in the midst of the pandemic. After a successful year, the chef owners are now opening a butcher shop deli, Carne Diem, just a few doors down this summer.
“It’ll be an upscale one-stop shop,” says Nelson. “There will be a butcher shop, seafood counter, large cheese selection, grab-and-go sandwiches, salads and snacks.”
The new 4,800 square-foot specialty shop will take over part of the former GreenAcres Market (4179 Mulberry Dr.) and include a retail section where customers can shop for “finishing oils, vinegars, tinned fish, crackers and all the accouterments,” says Nelson. Seasonal produce and housemade pasta will also be sold.
Ombra, known for its nose-to-tail butchery, will shift its focus to small plates. Carne Diem will be the new outlet for Nelson and Guerrieri to make and sell their “butcher products of yesteryear” like terrines, patês, sausages and savory pies. Nelson says they source 95% of their proteins within a 50 mile radius from KC.
“Since we are doing everything nose-to-tail, we have a love of using every bit possible,” says Nelson. “We’re able to create some unique products that aren’t anywhere else in KC.”
Carne Diem will also sell canned cocktails, wine, and high end spirits. Eventually, the couple would like to host classes for pasta making and butchering.
To kick off the new spot’s opening, Ombra is hosting a five-course dinner with wine pairings on June 30 at 6 pm. Tickets are $85 per person and can be purchased on the Ombra website.
