In the dead of winter, soup has healing properties. Not only can it cure what ails you, but it also warms you up, and we promise this Curry Coconut Soup can make your day a whole lot better with the first spoonful.
Serves 4 – 6
Ingredients:
▷2 ½ pounds peeled carrots, diced
▷1 small sweet onion, diced
▷1 ¼ tablespoons fresh ginger, grated
▷6 cups vegetable stock
Steps:
Step 1: Combine above ingredients and simmer on stovetop until carrots are cooked through.
Step 2: Remove from heat and blend ingredients until pureed.
Step 3: Add and mix these additional ingredients below:
▷1 ½ tablespoons yellow curry powder
▷¼ cup brown sugar
▷1 can (16 oz.) coconut milk
▷Salt and pepper to taste
Step 4: Garnish with a dollop of creme fraiche, cilantro sprig, toasted coconut, hemp seeds or your favorite toppings. Serve hot.
