Smoked brisket poutine is the BBQ dish you need to eat

If you want to stay at the top of Kansas City’s pig-eat-pig barbecue scene, you have to shake things up from time to time. Q39 chef Rob Magee knows that, which is why he recently overhauled the menu at his spots in Westport and Overland Park (q39kc.com). Among the new items was a revelation: brisket poutine. Poutine, for those not familiar, is a Québécois creation that involves dousing french fries and cheese curds in rich brown gravy. It’s already an extreme decadence — only a madman would seek to level up by adding the smokey, fatty cubes of bark-heavy brisket. Magee is that madman, and we thank him for it.
