Paleta Perfection

A favorite childhood memory is road-tripping to Mexico with my family and indulging on a paleta or two. The traditional Mexican frozen treat, similar to a popsicle, is usually made with fresh fruit such as strawberries and mango or with rich, creamy, chocolatey ingredients and nuts like pistachios.

Now, I’m happy to report that this small piece of Mexico has made it to Overland Park via The Paleta Bar (8025 Metcalf Ave., Overland Park), a create-your-own paleta shop. The Quezada family, who relocated from New Mexico, where these icy treats are much more prevalent, opened a place where customers can come in and design a paleta to their liking. 

There are endless combinations and unique flavors, like fruity pebbles, chili mango, taro, horchata, passion fruit and even avocado. They can be dipped, half-dipped or drizzled in chocolate and rolled in all sorts of toppings—a perfect treat on a hot summer day.
