Husband and wife team chef Penny and Doug Mufuka have created a name for themselves with their beloved Thai restaurant Bamboo Penny’s. The duo is about to open their second restaurant Aqua Penny’s but instead of Thai food, the new digs will serve an upscale seafood menu with a raw bar.

Aqua Penny’s opens on April 16 in the old Gordon Biersch location on the corner of Ash and 117th streets in Leawood (11652 Ash St., Leawood, KS). A recent walk through of the space showed a stunning interior complete with a full-service bar and floor-to-ceiling display cases full of top shelf liquor and wine. Plants line almost the entire ceiling and give the entire restaurant an aquatic vibe.

The seafood house will “be committed to impeccably sourced, sustainability-conscious, creatively prepared seafood and much more. According to The Star, the seafood bar will display “oysters, lobsters, mussels and other marine creatures.”

Anticipated menu items include fire-roasted octopus with sweet peppers and a seafood medley of salmon, shrimp, scallops, clams, mussels and calamari all sautéed in a tomato saffron broth. Not feeling fish? No worries. There’s also a ribeye steak and hefty Duroc pork chop on the menu.

The menu will change seasonally and offer shareable items along with seafood classics.

An extensive drink menu will include wine and champagne flights, house made infused spirits and craft cocktails.

The Mufuka’s are opening Aqua Penny’s alongside development specialist Michael Werner. The restaurant has undergone a 1.4 million dollar transformation with the inclusion of a wraparound outdoor lounge that will seat more than one hundred guests.

Here’s to hoping Aqua Penny’s can be added to our Top Places to Enjoy Oysters on the Half Shell in KC list.
