Since last year, Darren Carter and Matt Chapman have been popping up around town with their elite smash burgers under the guise of Disco Burger – and they’ve gained a cult following. Now folks will be able to snag a burger on the regular. The duo has paired up with some of KC’s top talent in the beverage industry to open a neighborhood burger and cocktail joint.
Opening in the River Market this spring (317 Delaware St., KCMO), Disco Burger will be teaming up with Varsity Club to take care of the beverage side of things. Varsity Club, operated by brothers Caleb and Levi Roye, will offer an array of classic and sophisticated cocktails “in a laid back environment with a no-fluff approach,” according to the press release.
The Roye brothers bring their upscale industry background with them. Levi is bar manager of KC’s renowned cocktail lounge The Mercury Room and Caleb has coffee and bar management experience at popular drinking establishments like the former Monarch Coffee, The Campground and Swordfish Tom’s.
Disco Burger will continue to not only sell their burgers, but other classic American fare, like hot dogs, patty melts, fries and cheesecake. Historically, each pop-up appearance has had an innovative twist, diners can expect similar creative takes on fast-casual food at the new restaurant.
Carter and Chapman have both spent years in the service industry and have a soft spot for other service industry workers. So, if you’re also in the profession, there’s more good news – Disco Burger and Varsity Club have your back. Expect to be catered to with nightly specials and discounts.
The River Market space has a large, park-facing patio with an intimate interior. The burger and cocktail duo “hope to provide the River Market a safe and welcoming environment for food and drink, with plans for both the bar and kitchen to stay open late.”
Brunch, grab-and-go meals and cocktails will be offered on the weekends during market season.
