This Local Wagyu Shop Expanding Quickly

Booth Creek Wagyu's Prairie Village Store

Booth Creek Wagyu opened its fourth Kansas storefront last week.

The new Prairie Village shop (5328 W. 95th St., Prairie Village, KS) sells only Wagyu raised on owner Dave Dreiling’s ranch in the Flint Hills. 

The Prairie Village store neighbors Betty Rae’s newest ice cream shop. Previous Booth Creek locations include Overland Park, Wichita and Manhattan.

It’s the first meat market of its kind, rating the cuts of beef based on the percentage of marbling. Much like they might select a fine wine or whiskey, customers can choose their flavor profile based on 20%, 30% or 40% marble.

In addition to steaks, Booth Creek stocks Wagyu hot dogs, burger patties, ground beef, roasts and snacks like summer sausage, snack sticks and jerky. The Wagyu shop also ships its products nationwide.

Dreiling’s vision with Booth Creek is to change the way America eats beef. He has one of the most advanced Wagyu ranching operations in the country and recently built a multi-million-dollar feeding barn in the Flint Hills like no other.

He collects data through his genetics and feeding system with the goal of creating America’s finest product and helping the entire American Wagyu industry grow beyond its current mom-and-pop status.
